It’s all about creating the perfect chicken wing as I welcome my friend Jairo back to the show. Jairo is always on the hunt for the perfect wing and has spent many hours perfecting his own version at home. Listen on to hear tips about what components go into the a great wing, and which cooking methods can get you closest to the real thing.

Mentioned on this episode

You may remember Jairo from other Kitchen Counter episodes including Latin American Favorites and Ten Favorite Sandwiches. You can also check out the episode of Jairo’s show, The True Bromance Film Podcast, where I was a guest along with “The Great Chicken Wing Hunt” director Matt Reynolds. Just a quick note–there is a bit of salty language and humor, so probably don’t listen in the car with your kids :-).

Curious about air fryers? Jairo swears that his fryer makes the best wings he’s ever had at home. Here are a few to check out at amazon. I plan to have Jairo back to talk specifically about air fryers soon.

Need sauce or side inspiration? We got you covered.

If you want to try your hand at making your own blue cheese dressing, give Deb Perelman’s recipe a try from Smitten Kitchen (scroll to the bottom of the page for the recipe).

For a traditional Buffalo wing sauce, Frank’s Red Hot has a very simple recipe. You can kick it up a notch and give Matt Reynold’s sauce a shot–it is one of my favorites.

Here are some great round-ups on chicken wing sauces from Food & Wine, The Food Network, and Delish.com.
