Easy Asparagus

How many times do you find yourself figuring out what you are going to make for dinner and struggling with the vegetable component? For many non-vegetarians, working with vegetables is a one-way ticket to rutsville; always falling back on the same old things we like to make (or don’t like to make but hey, we gotta each our veggies). Today I’m going to share probably the easiest fresh vegetable side dish (or snack) I know of and it only takes a few minutes to throw together. This is barely one step trickier than eating raw vegetables.

Asparagus will be coming into season here soon, but you can generally find it most of the year at your supermarket, imported from southern climates in the winter time. Look for the thinner stalks, as they will be more tender. When you prep asparagus you can easily remove the harder, woodier lower stalk by simply taking either end in your fingers and bending the stalk until it snaps, which it will do at right at the point where the stalk becomes tender.

Preheat your broiler, arrange your asparagus on a broiler pan in a single layer. Now drizzle lightly with olive oil and sprinkle liberally with kosher or sea salt. Put it into the oven directly under the broiler element for anywhere from 4-8 minutes, or until the asparagus starts to brown slightly (you may like it more done or less, so keep an eye on it). Remove from oven, and enjoy! Easy!
