For today’s episode I welcome long time listener Heidi Schmutzler to the show to tell me about her experience using the Instant Pot pressure cooker/multi-cooker appliance. Heidi wrote to me long ago to ask if I would talk about pressure cooking because she was interested but a little apprehensive about the safety concerns of pressure cooking. Since then Heidi has purchased an Instant Pot and it’s made a huge impact for the better in her home cooking routine.

We talk about the basics, favorite recipes, tips and mistakes to avoid when using an Instant Pot to pressure cook. Throughout the episode we reference some recipes and other materials.   • When cooking multiple courses for a dinner party I find one advantage of the instant pot fill and forget and keep warm facilty means you can be preparing other courses while the IP course cooks itself.
