Quick Fix: Pico de Gallo

Today is another guest quick fix! Jairo from the True Bromance Film Podcast stopped by to share with us his recipe for pico de gallo. Here’s the deal, if you like Latin American or Mexican food, then you really should master a simple pico recipe. The one Jairo shares beats the pants off of any you can find in the store, I promise. Here is Jairo’s recipe for pico de gallo:

Ingredients
8 to 10 firm Roma tomatoes, diced
1 red onion, diced
1 bunch cilantro, stems removed
1 Jalapeno pepper
Juice of 5 to 6 limes
Salt to taste

Dice the Roma tomatoes and onion and place in large, nonreactive mixing bowl. Put the cilantro and jalapeno in a food processor and pulse until chopped and combined and put into bowl with tomatoes and onions. Take the lime juice and add to mixture. Use a wooden spoon to fold all the ingredients together until well mixed. Serve right away or make a day ahead.
