- 1 pie crust, partially baked in 9 inch pie pan
- 2 large eggs + 2 large egg yolks
- 3/4 cup heavy cream
- 3/4 cup whole milk
- 1/2 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1/2 cup fresh spinach, chopped
- 1/2 cup sun dried tomatoes, thinly sliced
- 4 ounces of goat cheese, crumbled
Instructions
- *Note* Be sure to start with a partially baked pie crust! See notes for more information.
- Preheat your oven to 375 degrees F and position an oven rack in the middle position.
- In a large mixing bowl, whisk together the eggs, egg yolks, heavy cream, whole milk, and salt and pepper until well mixed.
- Distribute the goat cheese, sundried tomatoes and spinach evenly in the bottom of the pie crust. Pour over the egg and cream mixture to fill the pie crust to about 1/2 inch from the top of the crust.
- Bake until quiche is a light golden brown on top, and a knife inserted about 1 inch from the edge of the crust comes out clean and the center is beginning to set, about 30-35 minutes.
- Remove quiche to a rack to cool. Serve at room temperature.
