Baked Eggs
This dish is very easy to pull off and is great for breakfast or brunch. Your guests will be amazed at the sophistication of the dish. The variations on baked eggs are endless as well; practically anything you can imagine goes well with eggs.

  1. Preheat your oven to 400 F degrees. Combine spinach and marinara sauce in bowl.
  2. Layer marinara and spinach mixture in bottom of two mini gratin dishes. Make a “crater” in the middle of the sauce, and crack a whole egg into the crater.
  3. Season the egg with salt and black pepper. Sprinkle the mozzarella and parmesan cheese over egg.
  4. Bake in oven for 10 minutes for egg whites to be set, but your yolks to be runny. If you like a firmer yolk, bake for 15 minutes.
