The secret of these ultimate wontons are the three simple ingredients tucked inside. The spicy and savory chorizo reaches it peak against the cloudy creaminess of the goat cheese and the freshness of the basil pesto.
Preheat your oven to 400 degrees F. Line a baking sheet with parchment paper or a silicone mat.
Take wonton wrappers and lay them out all at once so you can work faster. In the very center of each wrapper, put a small amount each of the pesto, goat cheese, and chorizo (probably a hefty teaspon plus of filling total in each).
Dip your finger in the water and moisten two edges of the wonton wrapper. Fold the edges over and press together to seal so you create a triangle-shaped wonton. Repeat for each wonton until all have been folded.
Place wontons onto baking sheet and bake in oven for 12 minutes, or until edges become browned and crispy. If your baking sheet isn’t large enough you may need to bake in batched.
