Heidi wrote to me long ago to ask if I would talk about pressure cooking because she was interested but a little apprehensive about the safety concerns of pressure cooking. Since then Heidi has purchased an Instant Pot and it’s made a huge impact for the better in her home cooking routine.

When cooking multiple courses for a dinner party I find one advantage of the instant pot fill and forget and keep warm facilty means you can be preparing other courses while the IP course cooks itself.
