Lentil Chili

Description

Here is a great base recipe for a lentil chili you can take in many directions depending on the spices you choose.


Ingredients

Scale
  • 1 tablespoon vegetable or olive oil
  • 1 medium onion, chopped
  • 1 medium carrot, peeled and diced
  • 2 celery stalks, chopped
  • 1 tablespoon mild chili powder
  • 1/2 tablespoon ground cumin
  • 1+1/2 cups dried brown lentils
  • 28 ounce can of diced tomatoes with juice reserved
  • 4 cups water or stock
  • Salt and pepper to taste

Instructions

Heat the oil in a large skillet or saute pan over medium heat. Cook the onion, celery and carrots until soft, about 5 to 7 minutes.

Transfer to a crockpot along with rest of ingredients and mix well.

Cover and cook on low setting for 4 hours.
