Today I get back into the kitchen for a “Let’s Cook” episode! This will be my first time cooking Butter Chicken. I’ve had it several times at Indian Restaurants, but I have never cooked it myself (for the record, I have not made Chicken Tikka Masala either, but these dishes are closely related). I was thrilled with how it turned out and will definitely be adding this to my recipe rotation.
Mentioned in this Episode
First things first, there is no “standard” Butter Chicken recipe, and there are countless variations depending on who you talk to. After much searching I found this recipe from Bon Appétit that looked pretty good. I followed just as it is written because I wanted to see the exact result. I think this is a restaurant-quality recipe and highly recommend giving it a try.
Most of the ingredients should be easily found at your local grocery store, but if you have trouble with some of the spices then I recommend searching out a good Indian grocer. If that isn’t an option, then The Spice House online will have you covered (for fenugreek or garam masala, for example.)
I found this fantastic video of the making of butter chicken. Enjoy!
More on the history of Butter Chicken from Wikipedia of course, but also this article from Menu Magazine is a great primer as well.
If you don’t already own a pair of Ove Gloves, you should think about picking some up. I haven’t used a potholder in years.

I’’m surprised he didn’t use the America’s Test Kitchen recipe. Tested and much easier with great results.
Hi Michael! Thanks for the note – I’ll check out the recipe. I looked at a lot, and I can’t remember if the ATK was one of them (too many, too many!). -Roger
