Quick Fix: Caprese – TKC 37

Summer is starting to grow old, which means we are going to be full of fresh local tomatoes! But what to do with all that tomato bounty? How about a fresh and fun caprese salad?

Here is a basic caprese recipe:

2 tomatoes, thickly sliced
1 ball of fresh mozzarella, thickly sliced
Fresh, whole leaf basil
Coarse salt (kosher or sea)
Olive oil
Balsamic vinegar

Lay out your caprese by putting down one tomato slice, overlapped with a mozzarella slice, then topped with a basil leaf, then repeat until all the tomatoes are used. Finish the dish with a sprinkle of coarse salt, and drizzles of olive oil and balsamic. It’s ready to serve. Here’s what my latest caprese salad looked like:
