This recipe for Chili Colorado from Bon Appetit is one of my new favorites. It’s a perfect deep, rich dish brimming with chili flavor that you can scoop up with flour tortillas or eat with rice and beans. Incidentally, this recipe is from Rick Martinez, who was also the inspiration behind the Butter Chicken episode I did recently.
