Sorbet, Right Away

It’s summer, and it’s hot! In fact, where I live we are setting records for heat. When the weather turns fiery like this I have a hard time getting up the motivation to spend time in the kitchen cooking, and it can even be too hot to be outside grilling. So today I’m not talking about cooking anything. What?

Instead I’m taking you through one of the easiest and tastiest frozen desserts out there: sorbet. In this episode I cover the what sorbet is (and what it isn’t), the importance of sugar in your sorbet, and how you can make sorbet even if you don’t have an ice cream maker or fancy equipment.

Basic Sorbet Recipe

This recipe will get you what you need to make a wide variety of fruit sorbets. Different fruits may need more sugar (think tart lemons), and you should follow any specific sorbet recipe for the best results. But if you did nothing else but follow this recipe you should be in pretty good shape.

2 cups fresh fruit juice or puree
3/4 cup granulated sugar
2 TBSP Lemon Juice
1 TBSP Vodka, unflavored

Combine the fruit puree, sugar, lemon juice, and vodka in a metal mixing bowl. Stir until the sugar is dissolved and is no longer grainy feeling. Set your metal bowl into another metal bowl filled with ice (or seal and store the mixture in the fridge) until the temperature falls below 40 F degrees. When ready, put mixture into an ice cream maker and churn about 20-25 minutes, or until frozen. You can serve the sorbet immediately, but I think it’s better if you place in freezer for a few hours until it firms up. Be sure to eat your sorbet within a few days after making.

If you don’t have an ice cream maker:
You can still make a great sorbet without the use of an ice cream maker. Follow the steps above but instead of placing the mixture into an ice cream maker, you’ll use a metal pie pan. Place the pan into the freezer, and after about an hour check it. If it’s starting to firm up, take a fork and mix up the sorbet. Repeat this every thrity minutes or so until the sorbet is firm enough to form a ball. Then you are ready! This will make a slightly chunkier/grainier sorbet, but the flavor will still be outstanding.
