For today’s Quick Fix episode I’m going to share one of the secrets of the universe with you. With great knowledge comes great responsibility, so use this new-found power wisely. Today I share with you one of the greatest, but least known, flavor combinations around; basil pesto, goat cheese, and spicy chorizo.
Ok maybe I’m exaggerating a little bit, but not by much.
And by the way, the wonton vehicle for these flavors is easy and convenient, but is by no means the only way you can put this trinity to use. Flatbread toppings, hot dog condiments, beggar’s purses, ravioli, chip dip…you name it. They are a dynamite combination just about any way you can find to get them on the same stage together.

The secret of these ultimate wontons are the three simple ingredients tucked inside. The spicy and savory chorizo reaches it peak against the cloudy creaminess of the goat cheese and the freshness of the basil pesto.

- 1/2 cup spicy chorize Cooked and drained
- 1/2 cup plain goat cheese crumbled
- 1/2 cup basil pesto
- 18 wonton wrappers
- Water in bowl for sealing wontons
- Vegetable Oil for brushing onto wontons
- Preheat your oven to 400 degrees F. Line a baking sheet with parchment paper or a silicone mat.
- Take wonton wrappers and lay them out all at once so you can work faster. In the very center of each wrapper, put a small amount each of the pesto, goat cheese, and chorizo (probably a hefty teaspon plus of filling total in each).
- Dip your finger in the water and moisten two edges of the wonton wrapper. Fold the edges over and press together to seal so you create a triangle-shaped wonton. Repeat for each wonton until all have been folded.
- Place wontons onto baking sheet and bake in oven for 12 minutes, or until edges become browned and crispy. If your baking sheet isn't large enough you may need to bake in batched.
