Classic Italian White Bean and Tuna Salad

Ingredients

2, 6 oz. cans of Tune in water. Packaged tuna is fine also. 

Salt & Pepper 

1 –2 15 oz. Cans White beans such as Northern, Navy, Cannellini, etc. 

Small Red Onion sliced very thin 

2 Tbs Olive Oil, or to taste 

2-3 Tbs Red Wine Vinegar


Instructions

  • Drain the tuna fish and put into a large bowl. 
  • Drain and rinse the canned beans and add to the bowl with the tuna. 
  • Add the sliced onions to the bowl. 
  • Season with salt and pepper to taste. 
  • Add the olive oil and red wine vinegar.
  • Gently toss together until all ingredients are well mixed.
  • Serve and enjoy!  – this dish is often served at room temperature but is also good chilled and tastes great the next day as well.

Notes

Make a Mediterranean version by adding some kalamata olives and feta cheese.
